This is the YUMMIEST granola and so simple!!! It is also so easy to make granola bars out of it!! Recipe follows!
Ingredients
5 cup Oats
½ cup Coconut oil (I buy mine here; one gallon lasts me almost one year!)
½ cup Honey
1 tsp Vanilla Extract
1 tsp Cinnamon, Ground (CAN add more, to your taste preference)
1 cup Coconut, Shredded -- unsweetened (I leave this out)
1 cup chopped nuts -- your choice (I leave this out)
Instructions
Cook on low for 6 hours or until brown, stirring occasionally. Keep the cover on the crockpot slightly cracked. The more frequently you stir, the finer the consistency. If you prefer clumpier granola, stir less. (Make sure you scrape the bottom with your wooden spoon when stirring.) Once it's finished and cooled, you can add chocolate chips, dried fruits, raisins or whatever else you want in your granola. This is great to eat alone or in a bowl with milk!!
Also, this could easily be doubled. You could also triple it (a canister of oatmeal is 15 cups, which works great for tripling), just make sure you scrape the bottom when you stir it or you may have some that burns a little.
I store mine in an old pretzel stick container from Sam's...it works perfectly!!!!
GRANOLA BARS
3 cups of granola
3 eggs
some chopped chocolate chips (or mini-chocolate chips) OR raisins
½ cup of evaporated cane (this is optional, but I think it makes it taste better)
Press this in a parchment paper-lined cookie sheet and bake for 15 minutes at 350. Then, cut into bars and ENJOY!!!!
