I really truly meant to post this on Sunday or Monday; it just didn't happen. Let's just say that this has been a rough week for me...I have forgotten two very important things that affected a whole bunch of other people. Tonight, it totally felt like "pregnant brain," but I KNOW FOR A FACT that I am not pregnant. Anyway, enough of all that...here is my family's menu this week.
Monday:
Prep: Soak and cook rice for the week, thaw chicken stock
Dinner: Salmon, rice, corn (The salmon I buy is frozen from Wal-mart. It is the Wal-mart brand and is actually WILD caught, which is the only thing I will buy! It tastes great and is definitely a frugal price!)
Tuesday:
Prep: none
Dinner: Chicken Curry over Rice (I didn't actually get to make this because the chicken I had purchased at Sam's was BAD even though it wasn't past the expiration date...urghh! I actually took it back last night, and my mom treated us to Hideaway Pizza...yum...and I'm sure it was COMPLETELY organic...hahaha!)
Wednesday:
Prep: soak red beans for dinner Thursday
Dinner: church
Thursday:
Prep: none
Dinner: Red beans and rice, salad, fruit
Friday:
Prep: soak and cook more rice
Dinner: hot dogs, mac and chz, veggies (The hot dogs are nitrate-free, organic beef hot dogs. I buy the Annie's brand mac and chz from Wal-mart, which is about $1 cheaper than anywhere else!)
Saturday:
Prep: none
Dinner: Stir fry veggies with Peanut Sauce (I made this last month and WE LOVED IT!!! I made it a little too hot and won't add quite as much dry mustard this time. I had never made anything like this before, so I didn't really know what to expect. It doesn't take very much sauce over your veggies, that's for sure! I think I doubled the recipe and I really didn't need to. I bought organic frozen veggies from Whole Foods for this recipe.)
Sunday:
Prep: start crock pot before church
Lunch: sandwiches
Dinner: Crock Pot Whole Chicken, potatoes, veggie (I have no idea how I am going to cook this chicken yet!!!)

Hey, I wanted to let you know that I made cream cheese sort of. I let it drain in the fridge like you said. I even let it drain overnight and I still noticed a little liquid in the cream cheese so I'm not sure I did it right. It taste more like greek yogurt to me then cream cheese. We'll talk soon and you'll have to let me know what I did wrong. I also need a copy of that chart to know how you soak your rice I want to try it since you said it was so good.
